WHICH FAST FOOD CHAINS HAND BREAD THEIR CHICKEN? WE FOUND OUT

Fast food fried chicken can look similar once it is placed inside a sandwich or covered in sauce, but the preparation behind it varies significantly. Some chains bread every piece by hand in the restaurant, while others use vague phrases like “freshly prepared” that don't necessarily tell us whether the chicken arrived frozen.

While hand-breaded chicken may imply that the chicken is fresh, it doesn’t always mean that the chicken doesn’t arrive at restaurants frozen. I investigated some of the nation’s top fast food chains to find out which restaurants actually have employees hand bread or hand-batter their chicken on site, because when it comes to hot chicken, the fresher the better.

Bojangles

Bojangles makes the clearest claim of the chains I investigated. The Southern chain says its chicken is both hand-breaded and never frozen, then prepared fresh inside its kitchens. This is a double-win for Bojangles. The bread coating is applied by hand, and always arrives fresh to its restaurants. Of all the brands investigated, this is the strongest and most direct “fresh, not frozen” chicken you can find.

Chick-fil-A

Chick-fil-A maintains that its chicken is breaded by hand inside each of its restaurants. For the Original Chicken Sandwich, employees dip the breast filet in an egg-and-milk wash, coat it in seasoned breading, and pressure-cook it in peanut oil. The chain also explains that the Original Chicken Sandwich is hand-breaded daily in every restaurant kitchen.

However, Chick-fil-A’s official materials focus solely on the chicken being freshly prepared and hand-breaded. I did not find a similarly clear nationwide statement saying the raw chicken is never frozen.

Popeyes

Popeyes does not just hand bread its chicken, but it also hand-batters each piece before breading and frying it in the restaurant. The chain also marinates its chicken for 12 hours, which helps explain why the seasoning tastes better than something sprinkled over the crust at the last minute.

Popeyes uses the same hand-breaded and hand-battered language for menu items including its tenders, wraps, and chicken sandwiches. Like Chick-fil-A, Popeyes clearly confirms the in-restaurant breading process, but its public language does not clearly establish that all of its raw chicken is never frozen.

KFC

KFC’s entire reputation is built on its seasoned coating, so it makes sense that actual cooks are still involved in applying it. The chain says its chicken is breaded by hand and freshly prepared in restaurants. Its Original Recipe Tenders are double hand-breaded using the chain’s blend of 11 herbs and spices, while its nuggets are also described as hand-breaded and made fresh for each order.

KFC’s global materials say it uses fresh chicken in “most markets,” but is not specific enough to claim that every U.S. location exclusively uses never-frozen chicken.

Raising Cane’s

Raising Cane’s keeps its menu almost entirely focused on chicken fingers, and the chain says those fingers are hand-battered by specially trained employees.

According to the chain, its chicken is marinated for 24 hours, hand-battered, and cooked to order. The restaurants also do not use heat lamps, so each batch is fried for the customer rather than sitting around waiting to be ordered.

“Cooked to order” guarantees that the final preparation happens fresh, but again, Raising Cane’s does not explicitly state that its raw chicken is never frozen.

Which Chain Uses Fresh Chicken?

Don’t be fooled—just because a menu declares that its chicken is hand-breaded, that does not necessarily mean that it’s fresh. Based on our research, Bojangles definitively states that its chicken is both hand-breaded and never frozen.

Chick-fil-A, Popeyes, KFC, and Raising Cane’s all confirm that employees bread or batter chicken as part of the restaurant preparation process. What they do not all confirm is whether every piece of raw chicken arrives frozen or not.

Plenty of fast food chicken is still breaded by an actual person, but unless a restaurant specifically says “never frozen,” the word “fresh” may only describe what happens after the chicken reaches the restaurant. The more you know!
